I didn't ride my bike today. There was just too much going on and my butt needed a break. Weigh in tomorrow!

Chili with Cheese and Sour Cream 575

Crock pot Vegetarian Chili Recipe:
1 can Black Beans
1 can Pinto Beans
1 can low sodium diced tomatoes
Vegetable Broth
1/2 medium sized onion
2 garlic cloves
1 tbsp cumin
3 tbsp chili powder
1 tbsp olive oil

1) Chop garlic and onion and put in the crock pot with the olive oil. Allow these to cook a little bit while preparing other ingredients.
2) Drain (but don't rinse) the pinto beans. (the left over sauce thickens the chili)
3) Do not drain the black beans. (I buy the seasoned version)
4) Add beans and diced tomatoes to the crock pot.
5) Fill the pinto bean can with vegetable broth and add to crock pot.
6) Add cumin and chili powder. I also add red chili flakes to spice it up a bit.
7) Stir and leave on high heat, covered. (if you are going to be gone a full 8 hours you might want to leave it on low)
8) Add sour cream and cheese to your liking!
