No updates in a while! Oops. School and work have taken all of my time lately. I haven't done so bad with the diet though. 20.5 pounds down!!! Go me. 20 more to go and I know I can do it! Slow and steady wins the race.
Today I did lotsss of strength training on Wii fit, and my legs are all wobbly. I'm worried I'm going to have trouble getting out of bed tomorrow because I am going to be so sore, but it will be worth it.
Luckily, I have made it through the hardest week of the semester with two back to back tests and a lab during which I had to give immunization shots (SCARY!). It actually went pretty smoothly and it should be pretty smooth sailing from here on out. I have every night off this upcoming week and nothing big school wise so I am looking forward to some bike rides, time for cooking good meals, leisure reading, and maybe even catching up on some TV!
The goal is to be down below 160 pounds by my birthday (Feb. 17th) which shouldn't be too hard. On Tuesday morning I was at 162.4 pounds. Wish me luck. Gotta fit into this super cute purple strapless dress I bought for New Year's Eve but ended up not wearing. Maybe I can figure out how to put a pic up, if I get to wear it.
Anyway, I haven't been writing down my calories (or blogging about them, obviously) because of my super busy schedule, but hopefully I will get back into it. I have just been keeping track in my head, but I don't feel like that is as effective as writing them down. It's better to be able to actually visualize on paper how much you have eaten and what food group allowances you have used up for the day when it is all in a journal.
I'll probably not blog each day with my calories, just due to time restraints, but I'll try to keep this updated with progress, ideas, and recipes.
Going out for Mexican tonight. Hopefully I can't try to stay away from the free chips and order something semi-healthy.

I have been too busy, stressed, and discouraged to write this blog, and, on a couple of occasions, stick with my diet. The entire month of January I have only lost around 1.5 pounds. It has really been bothering me and making me not even want to try anymore, but of course that is the worst reaction I could have because I will end up gaining weight back if I don't keep trying, and I emotionally eat. I didn't break my diet everyday since my last post but I definitely did a couple of times. I also *GASP* ate a hamburger from Sonic! But just to clear things up, the majority of the reason that I am a pescatarian now is to avoid the massive unnecessary amounts of antibiotics that are in meat products sold in grocery stores and at restaurants and fast food chains. I want to avoid antibiotic resistance as much as possible since I learn about the detriments of it everyday in class! I also don't agree with the way animals are overfed, mistreated, and when it comes down to it...tortured really. But a hamburger once in a blue moon isn't going to kill me.
Today was a long day, but I accomplished what I wanted to. I worked from 8-12, went to class from 1-4ish, rode my bike to and on the riverwalk and back, and have completed most of my required schoolwork for the week. Even fit in a little nap in there. Not too shabby. If only I could keep up this motivation all of the time.
Today I decided to start taking Alli. I bought it a while ago and have taken it a few times here and there, but never consistently. I thought that it could give me a little boost since I am in a tough spot right now and trying to get over a hump of stagnant weight. I guess I will find out if the side effects are worth it. I bought some multivitamins (which I should be taking daily anyway), but it is especially important with Alli since it can interfere with my daily vitamin absorption. I never really thought Alli would help too much because the foods I eat while I am on my diet never have too much fat, and Alli just helps with not absorbing all of the fat you take in, but it is worth a try. I got it from work on sale with my employee discount so it didn't even cost that much.

Egg sandwich with american cheese 200
Coffee with skim milk 30

Cucumber sandwich w/ 1 tbsp light mayo 150
Americano with 2% milk and 1 pump mocha and honey 100
Ginger glazed mahi mahi 300 (from previous recipe)
"Pasta Rice" 150
Side salad with onions, cucumber, 1 tbsp tangy balsamic vinaigrette 75
Total = 1225

"Pasta Rice" recipe:
1 oz whole wheat thin spaghetti
1 tbsp light butter

1) Break up pasta into rice sized pieces
2) Melt butter in pan on medium high heat and spray pan with cooking spray to prevent sticking
3) Brown pasta until it is a dark golden color, stir often; remove from heat
4) Add 1/2 - 1 cup of water and bring to a boil; stir often, and if the pasta is not al dente when all of the water is absorbed/evaporated add more
I poured some of the ginger marinade from the fish over the pasta and let it simmer then I placed the fish on top of the pasta and poured the rest of the marinade on top. Yummy!
Kind of like a healthier version of Rice-a-Roni which I loved when I was little!
(and I actually made it because I didn't have any rice on hand)

I was bad yesterday. I did well up until we went to trivia and then I had to give into the pimento cheese fries and numerous pitchers of yuengling. We went to lunch at hunter and gatherer too and I had a fabulous crab cake sandwich with hoppin johns salad for the side, and I think I was fine on my calorie intake until I had the alcohol. I do miss drinking though and need to let loose a little more, so oh well!

I rode my bike to class today and it was lovely. It is already becoming easier. The weather was perfect too. I was actually stopped in front of the capitol (capital? i always get those confused) building and some cute guy in a suit just started talking to me and said it is such an amazing day today isn't it? We had a nice little chat. Should have gotten his number but I'm not that ballsy and I didn't check his finger for a ring.
(oh btw, I rode my bike for about an hour yesterday...did the entire river walk near my house. I think it is about 3 miles one way)

If you can find these mini crab cakes (I think they are made by Philips seafood), they come in boxes of maybe 18 or 20?, at publix, they make amazing salad toppers or just a great appetizer. I find them on sale for maybe $12 or $13 for the box. Not too bad for really high quality crab cakes. Also the little cakes that morning star farms make are delicious. I love morning star farms brand in general, but they have these little cakes both southwestern and asian ones, that are a good source of protein for vegetarians. Sadly, they no longer carry them at the publix I frequent as of the last grocery trip I made.
I'm going to Starbucks now to study and research the night away so I'm sure I will have a little tasty treat with lots of wonderful calories. I'll log it when I get back.

Yesterday I ate take out chinese, so I am prettyyyy sure I went over my calorie limit for the day. haha I wish I could eat take out chinese everyday and stay within my 1400 calories but I just don't think that is possible.
Today I was better though. I'm also not too worried about it because I do have to let myself break the rules every once in a while. So far today:

English Muffin, 2% american cheese, MSF "sausage" 230
Americano w/ 2p of Vanilla and half & half 70
Smart Ones Macaroni and cheese 270

"Eggplant parmigiana (minus the parmigiana, plus the asiago)" 340

Recipe:
3- 1/2 inch slices of eggplant 25 cals
1 tsp olive oil 40 cals
1.5 oz. whole wheat angel hair pasta 155 cals
1/2 cup of tomato and mushroom sauce 70 cals
~1/2 oz grated asiago cheese 50 cals

1) Slice the eggplant and salt it liberally to take the bitterness out
2) While this is resting, start water to boil, and add the pasta when it starts to boil
3) Heat up a grill pan for the eggplant on medium high
4) Split 1/2 tsp of olive oil between the three eggplant slices and rub on one side, then spray the grill pan with olive oil spray and place the oiled side of the slices down in the pan
5) Right before you flip the eggplant over (after 4-5 minutes), use the other 1/2 tsp on the top side of the eggplant and spray them with olive oil spray, then flip them over.
6) Sprinkle garlic powder on the top side of the eggplant (to your liking)
7) Allow the eggplant to grill for another 5 minutes or so
8) Heat up the pasta sauce and when the pasta is done pour it over the pasta
9) Place the eggplant slices on top of the pasta and then grate however much cheese on top that your little heart desires.

You can obviously use whatever cheese you have on hand. I normally do the traditional mozzarella and parmesan (sp?) but I decided to switch it up and use asiago. I was pleasantly surprised. Also I don't bread the eggplant because that takes out calories from both bread crumbs and the egg white used to coat it. I actually love the grilled eggplant because I can taste it more than if it is breaded and fried.
To come up with my calories for things like eggplant, fish filets, and pasta I use a scale that measures to the ounce or gram. A scale is a dieter's best friend. When I get the weights I go and check the calories on a site like http://www.calorieking.com, or www.thedailyplate.com.
I'm sure I will eat a little something else later, especially after I exhaust myself playing my new Super Mario Bros game for the Wii, so I will update then!

I didn't wake up until 1:45 today. I'm pretty sure that is the latest I have ever slept. Probably because I was up til 5:30, but that's a whole other story.

The fish was really amazing. Probably one of the most filling and flavorful low calorie dishes I have had. I recommend that whoever is reading this tries it.

On a completely different subject, as long as I can whine and beg enough to get an extension on the cutoff for out of state rotations which ended today at 5, I will be doing a rotation in Seattle, Washington next year!!! So excited!

Today I did not ride my bike...again!...and I went to this interdisciplinary dinner where I ate the food that was provided so I am going to have to guesstimate on the calories. I wish I could just eat at home everyday for all of my meals so I could control everything I am eating, but then I guess I wouldn't have a social life. Let me get the tally going though, because my stomach is growling and if I have any calories left over I am going to go have a delicious little snack. Oh and I didn't ride my bike because I had to dress up for the dinner and I wore a dress.

I didn't ride my bike today. There was just too much going on and my butt needed a break. Weigh in tomorrow!

Chili with Cheese and Sour Cream 575

Crock pot Vegetarian Chili Recipe:
1 can Black Beans
1 can Pinto Beans
1 can low sodium diced tomatoes
Vegetable Broth
1/2 medium sized onion
2 garlic cloves
1 tbsp cumin
3 tbsp chili powder
1 tbsp olive oil

1) Chop garlic and onion and put in the crock pot with the olive oil. Allow these to cook a little bit while preparing other ingredients.
2) Drain (but don't rinse) the pinto beans. (the left over sauce thickens the chili)
3) Do not drain the black beans. (I buy the seasoned version)
4) Add beans and diced tomatoes to the crock pot.
5) Fill the pinto bean can with vegetable broth and add to crock pot.
6) Add cumin and chili powder. I also add red chili flakes to spice it up a bit.
7) Stir and leave on high heat, covered. (if you are going to be gone a full 8 hours you might want to leave it on low)
8) Add sour cream and cheese to your liking!

So I think I will try to do my daily calorie count on here and maybe some recipes. As most people who are reading this should know, I am on a ~1200 calorie a day diet. However, according to a very useful little app on my Ipod touch, I can consume 1400 calories a day to lose 1 and a 1/2 pounds a week. Not too bad! So if it is a rough day I will definitely be taking advantage of those extra calories. I also am a newly converted pescatarian (since September?) so that adds some challenges to the diet, but so far it actually has been a pretty fun challenge to create a good variety of low calorie healthy recipes I can enjoy!

Here is a summary of my progress:
I started at 182.5 pounds in September.
Starting October 1st I kept a journal of everything I ate on a daily basis and only broke my rules once every 2 weeks or so for the first 6 weeks. Around Thanksgiving this of course was not going so well, but other than a few occasions I kept up my diet until around December 9th I think. The grand total of weight loss was 15.5 pounds. I also did a lot of Wii Fit during that time frame. Once holiday happenings started into full swing the diet kind of disappeared. I actually didn't really watch what I was eating at all. That's how it goes when I am with my very southern minded parents. I also threw my vegetarian ways out of the window for the most part because my parents think it is silly and I would not have been able to survive at their house without consuming meat. Amazingly, when I weighed myself around January 3rd or 4th I had only gained about a pound back! So that encouraged me even more to start back up. On January 5th I started calorie counting again at a weight of 168 pounds.
I did not weigh myself today, but two days ago I was at 167.2 pounds.

Calories for the day:
Omelet (2 eggs, tomato, onion, cheese) 240 calories
Morning star farms "sausage" 80 calories
Smart Ones Lasagna Florentine 290 calories
Green tea lemonade from starbucks w/ 3 pumps of classic syrup 130 calories
Eggplant, Tofu, and Bok Choy "stir fry" ~320 calories

Vegetable Spring Rolls 200 calories
Total = 1260

My eggplant, tofu, and bok choy recipe was very similar however to make it for just one person, and to change it up a bit this is what I did:
-Dried the tofu first (a good tip I didn't know, this was actually my very first time cooking tofu myself!)
-Used 1 tbsp of olive oil instead of 2
-Used 1/5 of the package of tofu (70 cals)
-Used 1/3 of the eggplant- salted it generously and left it to sit for a while, while I was preparing other things to take some of the bitterness out!
-Used 3 "leaves" of the bok choy (mine was not baby bok choy, just the regular stuff)
-I added 2 large button mushrooms, sliced into thick pieces, and added them at the same step as the bok choy
-I used the same amount of garlic and ginger as the recipe called for because I like a lot of flavor!
-I added red pepper flakes to the eggplant, like what is recommended in the recipe
-I used 2 tbsp of soy sauce, and a little less water in the eggplant step

It turned out fabulous! I think next time I will serve it over some rice because the sauce was a little thin, but it tasted wonderful and rice would have soaked it all right up.

I also rode my bike to class and back home which totaled about 45 mins of bike riding.

one semester of classes left. i can't really believe it. all i have known for the past 20 years is school. i know i still have a year left of rotations but they are more like work experience than school. it's crazy how close i am to the real world!
i was really looking forward to break, but it seems like i have been on an emotional downward spiral for the last few days. maybe i can break out of the funk since i will have so much free time to do things i really enjoy and not stress about anything. just have to try to stick to the diet so that i don't gain any weight back. that would just really enhance my depressed feelings. it would probably be a good idea to try to watch some uplifting movies for a change instead of all of these intense, dark dramas i have been watching lately.

My mind is racing to the finish line

So many thoughts.
Can't control my crazy mind this evening.
When I was driving home this evening, first of all...it was fabulous with the windows down and some folk music playing in the background. Second of all I drove by the whig and art bar (even though they weren't really on the way) and reminisced. I miss going to those places. Even though I might not fit in at either of them perfectly, I for sure feel more comfortable and enjoy the company more at those bars than I ever have, will, or want to feel at the clones-r-us bars in five points...this description obviously excludes a few of the enjoyable places in five points including Speakeasy, Tavern, and on occasion Delaney's. But because of my failed relationship with Jess I really don't have anyone to accompany me to the bars I'd like to frequent. I'm working on it though. Soon enough I will get my friday night dancing on at art bar. Anyway back to what I was trying to get to...I was driving down Park Street and drove by the place where I hit a squirrel a few weeks ago...and there was a cat in the exact same spot that the squirrel was that I killed! The crazy part is that when I hit the squirrel it must have run under my back tire because I never saw it in the street, but I heard (and felt) a bump. I started freaking out and felt completely terrible because I thought I may have hit someone's cat..but I couldn't convince myself to go look and find out what it was. This is partially due to the fact that there was a car behind me and I could feel them staring at me thinking "Cold blooded killer!" or something along those lines. Gah, it was terrible. Luckily, when I went by the next morning though I determined that it was a squirrel so some of my nerves were calmed. (Not that it is okay to kill a squirrel, but at least I didn't kill some little kid's best friend or something) But then tonight when I saw the cat sitting there all those feelings came rushing back and I think I probably went about 3 miles an hour until I was sure the cat was safe and hundreds of feet away from my homicidal tires.
Then...I was coming down the massive hill right before the entrance into my neighborhood and something about the light of the moon tonight and the shadows it was making made the humongous kudzu overgrowth on the corner look like a big green blob monster. It was kind of rustling in the wind and looked all ominous. Creepy!
I watched seven pounds tonight. It was pretty good. I'll give it like 7.5 stars out of 10. Will Smith did a great job. It was making me feel old though because he is really starting to age. It's not a good sign when movie stars start to look old. And then I'm still trying to figure out why it is named seven pounds. I get the seven part. But what does pounds signify?

It's been busy lately. Exams and the end of the semester. One more exam and I will be half way through pharmacy school. Thank you Jesus!

Though I should be studying, we just got NetFlix so I have been watching all of the movies that you can watch instantly online. I just finished Eyes Wide Shut, which was pretty freaking awesome, so I had to add all of Kubrick's films to my long list of movies I need to see. At the moment, however, I am watching a documentary about the lives of monks. Monks fascinate me, and I think gregorian chants are one of my most favorite sounds in the entire world. That's a high honor because sound is my favorite of the five senses and making it to the top of that list is difficult. The documentary is called Into Great Silence and the only sounds are the sounds the monks make going about their daily lives. So far they haven't sung or prayed but I'm enjoying it nonetheless. The point of this quick blog though is that while I'm watching this film detailing the lives of all of these men that dedicated their lives to sacrifice and silence, I keep thinking about my life and my rejection of all things religious and divine. It is depressing me a little bit because there are so many people in the world that devote their entire lives to their religion and then there are people like me who think that pretty much their whole existance was wasted on a figment of their imagination. How much would it stink to spend your entire life working towards something that doesn't even exist? And then you die, and find out that you wasted your time. I hope for their sake that they are right, and I am wrong, but I seriously doubt it. Even if they are wrong, I have so much respect for their conviction.

"The Hills have Thighs" was definitely interesting to say the least. It was funny and I liked how the director played around with different stereotypes and making fun of them. I really enjoyed the part when there was Q & A with the director.

Hump day

It's very rare for me to write a blog before midnight and pretty rare that I am completely sober so it's unheard of that I'm writing this at 10 am!

Did my presentation this morning at 8:30, then didn't feel like coming straight home, or staying for class so I went to Adriana's for an iced americano (which hit the spot), and then drove around campus for a bit with the windows down enjoying Dark was the Night for the bazillionth time. It's a such a nice day today. *Pause to open the windows in the apartment* Now I'm listening to Modest Mouse on Pandora and talking to Jess about ways to ask out her hot TA.
I just said "For some reason I enjoy picking things out of crevices." I surprise myself with how strange I am sometimes. We were discussing cleaning out the keyboard on our laptops. Then Jess started pulling off her peeling skin from her sunburn. Then she threw it on the floor. And she told me a story about how her sister was grossed out when she did that and she said, "What? It's just epidermis!" This is how our conversations go.
Anyway... last night we went to Taco Tuesday at the Whig with some people and then I came home finished up my powerpoint presentation and decided to head back out. We went to Speakeasy and visited PJ. It's sad that he is leaving in a month. One less cool person I know in Cola. I had a beer called Tusker, which is from South Africa I think and it was really delicious. I kept the bottle too because it has an elephant on the front. We stayed out too late and stopped by Pita Pit on the way home.
Tonight I have to decide whether to go to a fancy pharmacy dinner at some swanky hotel or go to the opening night of Indie Grits at the Nick. The dinner is free, but I'm definitely leaning towards Indie Grits because I have wanted to go since I heard about it a few years ago. I've just never had the time. I have heard good things about "The Hills have Thighs" too. Haha, what a great title. Actually, I think that just made the decision for me.
I'm also considering talking to the people at the Nick about volunteering there. I don't have that much free time but I think we are really priveleged to have such a cool establishment in Columbia and if they need some free help I would enjoy doing it and I would get to meet some really interesting people. I'm not really sure if that is bad of me since I am in pharmacy school. I should probably be volunteering my time at the free clinic or some other health related institution but honestly, I would enjoy volunteering my time at the Nick more. That's all that really matters, right?

Let's put it this way....life is good right now, I really can't complain about much at all, but...
It's been way too long seriously.
It's not just the sex. I mean sex would be great, yeah, but I want someone to play with my hair and someone with a stubbly chin to rub my face against in the morning. (I thought I made that word up..stubbly that is..but of course I had to double check myself in the handy Merriam and Webster's and it is an actual adjective which makes my day even better)
I want late night talks in bed and drinking coffee and reading together in the morning.
The thing is though, I don't want anything serious. I'm not ready for all that bullshit.

Where are all the intelligent, bearded, tattooed men?
I don't even think I am attracted to a guy in a button up shirt and a clean cut look anymore.
That's probably a bad situation for me since I am surrounded by "professionals" the majority of my day. What have I gotten myself into?!
I'm more of the type to believe the idea that if you don't think about it and obsess over it, it will just happen naturally, so I'm gonna stick with that right now and just try to occupy myself with other endeavors. We will see how long that lasts.

Well I want to keep track of some of my favorite lines from the book I'm reading, which I should have been doing all along, but since I just came up with the idea, I'll start now.

*Even thinking, it turns out, affects the way genes work. How fast a man's beard grows, for instance, is partly a function of how much he thinks about sex (b/c thinking about sex produces a testosterone surge).

It's fun getting drunk on a Monday. Too bad it doesn't happen more often.

Why do I enjoy watching the Hills? I normally am against such mainstream crap, but the Hills just gets me. I think it is because my own life is so lame and I need some excitement and drama added in. Who knows? I hope heidi leaves spencer. He is a DB. I can relate.

I have a med chem exam Wednesday, that sucks.

I loved the rant and rave this week in the free times about "the herpes".
